Chilli, Parsley and Feta Salad

This is a Ghillie Basan recipe. And it’s amazingly good!

For 3-4 people as a side dish you need:
1 large red onion, thinly sliced
1 pepper, sliced thinly (I used orange as I don’t like the green which was suggested)
1 chilli, de-seeded and finely chopped
2-3 cloves garlic, crushed
1 bunch flat parsley, chopped
1/2 pack feta, crumbled
2 large tomatoes, chopped
4 tbsp olive oil
juice 1/2 lemon
salt and pepper
Barbere seasoning to serve

Place everything onto a plate and top with the feta. Drizzle over the oil and top with the barbere seasoning. Leave to settle for about 30 mins before serving.
