Curried Cabbage Soup (v)

And no, it’s not as grim as it sounds. Promise.

For 3-4 portions you need:
1/2-3/4 leftover cooked cabbage
various other cooked leftover veggies (I had leeks, carrots, cauli)
1 litre vegan stock
1 tsp ground cumin
1 tsp curry powder

Place everything in a pan and simmer for 5-10 mins till hot. Blend and serve. Simples.
